Vietnamese Chicken Salad

Sausage making day, I was craving a light and refreshing lunch. And on days when I want something completely different, I cruise other food blogs for ideas. I found this one at Everybody Likes Sandwiches, and I followed the dressing recipe to a T. The salad itself was made up of what I had on hand and I poached a few chicken thighs for the meat.

Very refreshing and tasty! Vietnamese Chicken Salad

Was the fish sauce sorta pungent smelling? I like it in dishes but it makes me gag when I smell it in the bottle :)

I absolutely adore Vietnamese chicken salad! Definately tops as a favourite summer food.

wheresmymind, it's fermented fish... while I love its presence in dishes, I try to avoid putting my nose anywhere near the bottle.

glad you liked it! i'm now craving some too. mmmm. it's also really great with bbq pork from chinatown instead of chicken.

wheresmymind, as s'kat said, fish sauce is pretty pungent. But it does taste good on food. One time, the kids at school dropped a two litre glass bottle of fish sauce on the floor. Took weeks to get rid of the smell.

s'kat, i have to agree, definately summer food!

kickpleat, thanks for the BBQ pork tip.

Can't say I've ever tried this. Guess I'll have to put it on my to-do list.

Hmmm... living in a place that uses fermented fish grease as a condiment must make me completely immune to the smell of the fish sauce. I actually enjoy the smell of the fish sauce.

That sounds very light and refreshing. Unfortunately, I packed up about 90% of my kitchen tonight! Maybe in a few months...I'll remember this.
