Turkey Burgers with Special Sauce

I like top plan the week's menu in advance, but sometimes, it hits a snag. Monday's planned Dinner was Turkey Burgers with Special Sauce, spotted at Culinary in the Desert A trip to the market and I spotted fresh morels, only 12$/lb, What to do.....


Morel and Turkey Burgers with Special Sauce
(Adapted from Culinary In the Desert, who adapted from CL)

1/4 cup chopped watercress
2 tablespoons balsamic vinegar
1 tablespoon soy sauce
1 teaspoon fresh oregano
1 garlic clove, minced
1/3 c chopped morel mushrooms
salt and pepper to taste
16 ounces ground turkey breast
1/2 cup Special Sauce *see below
4 split whole wheat buns
4 lettuce leaves

Preheat grill

In a large bowl, mix together watercress, balsamic, soy sauce, oregano, mushrooms, garlic, salt, pepper and turkey. Shape mixture into 4 even-sized patties. Lightly oil the grill rack. Place them the rack and grill about 6 minutes on each side or until done. (cooked them stovetop)

Spread about 2 tablespoons of the sauce on the top half of each bun. Place a lettuce leaf on bottom halves and set the burger on top. Place the top half of the bun on and cut down the middle.

"Special Sauce"

3/4 cup mayonnaise
1 1/2 tablespoons finely chopped watercress
2 tablespoons Dijon mustard
1 tablespoon honey
1 teaspoon balsamic vinegar
1 teaspoon low-sodium soy sauce
1/2 teaspoon finely chopped oregano

In a medium bowl, whisk together mayonnaise, watercress, Dijon, honey, balsamic, soy sauce and oregano. Cover and refrigerate until needed.

Makes about 3/4 cup

It's like you read my mind or something. So often i'm thinking of a dish (whether I have the ingredients is irrelevent here) and you've already made a version of it within a day or so. Hmmm... Do you have a camera and microphone set up in my brain? LOL ;-)
