The original plan was tempeh tacos for me and beef tacos for Rob. Unfortunately, I didn't make enough corn tortillas, so I ended up having my tempeh on a bed of baby spinach!
I sliced the tempeh and cooked it with a marinade of lime juice and a touch of chipotle, then laid it over the spinach, topping it with homemade salsa and a touch of sour cream.
For Rob's Taco's, I made the corn tortillas inspired by The Gluten Free Girl and marinated a cheap steak all day in lime and chipotle. I seared the steak, sliced it very thinly and served it alongside salsa, sour cream, cheese and the tortillas. He seemed to enjoy it.
We will see if today is a better day for the snacking urges ~ I plan to be out job hunting, so thst should distract me somewhat. Tonight is a dinner out at a dumpling house on Main; this should be interesting.

The meat on Rob's looks delicious...
the tempeh looks amazing! nice one for sure.
Linda,
Those look delicious! I've missed visiting ... it's been a busy time lately. As always, great post!
By the way, are you going to participate in Canadian Blogging by Post!
That meat looks a tad more cooked than Ben likes his. He likes his 'blue'... or is that mooooo ;-) But I think he might tolerate this dish. Not sure what Frenchie would think of the sour cream in it or even what he'd make of the corn tortillas. I need to check out those tortillas and see if I have the ingredients.
Cate, thank you, Rob said it was really good ~ I used Terrytx's Chipotle lime marinade.
Sara, thank you, I love tempeh, I just forgot to use it more often.
ivonne, thank you for the compliment ~ you are making me blush! And I absolutely want to take part in Canadian Blogging by Mail.
Nerissa, Ben would probably like the rest of the steak then ~ it was blue, I saved it for stirfry. The tortillas are totally simple, but i think the masa harina is a special component. I got it at El Sureno on Commercial Drive.
ever since you mentioned masa harina to me ive been looking but havent had much luck other than a whole tortilla making kit which actually looks like a LOT of fun... no money at the moment though so itll have to wait, i'll sit here and be jealous of your lovely tortillas from a distance ;) looks delicious!
