My first recipe from the latest Vegetarian Times. It was both a success and a failure, if that is possible. The dish was very good, but I ended up finishing it in the frying pan instead of in the oven as per the recipes. I think the issue was that I used panko instead of regular breadcrumbs, making it more difficult to achieve even crispy goldness. served with farro risotto and green salad.

I have yet to have a success with any VT recipe I try. It's almost as if they write the recipes without testing them. Looks like you managed to salvage this one - looks great!
I hate to sound so uneducated in food but what is farro?
It's funny too that you should be having difficulty with a vegetarian eggplant recipe the same night I did.
Farro is very closely related to spelt. I think I might do a little blurb on it...
I just started getting VT in the mail too. I found a link that had the subscription at some ridiculous low price, I think it was 3 bucks for the year( it comes to my PO box in the states). I used to get it years and years ago when I lived with my ex who was a vegetarian. The recipes used to be a lot more complicated and involved. I think I'm going to make that vegan chocolate cake for the next sugar high( low) friday. I thought the mushrooms looked good, but I cant stand eggplant.
Randi, I used to loathe eggplant ~ I somehow kicked that dislike.
